Seasoned Advice: BBQ Tips and Tricks from two of Canada's Top Chefs

Prostate Cancer Canada’s first Celebrity Battle of the BBQ presented by Hill Street Beverage Company is fast approaching. To prepare teams to grill alongside Food Network Canada chefs and draftable celebrities like Billy Baldwin and Damon Allen, we asked chefs Roger Mooking and Corbin Tomaszeski for their best grilling advice. Read on for tips and tricks, and learn why the event is so important.

  • What is the most interesting ingredient you've ever grilled?

Fresh avocado filled with ceviche and lime.

  • What's the best grilling tip you could give aspiring grillers?

Always pre-heat and clean your BBQ or grill! Rub a halved onion (cut side down) on the grill to remove excess debris. It also adds a sweet onion flavour to the grill and any items you place on top. 

  • Favourite BBQ restaurant in Canada?

It has to be Adamson BBQ, on Wicksteed Ave in Toronto. They have the most amazing brisket. 

  • Why is the Celebrity Battle of the BBQ important to you?

This incredible event brings awareness and raises fund for Prostate Cancer Canada. I lost an uncle to this horrible disease all because of the stigma attached to it - meaning men don't like to talk about it and ignore the symptoms and preventative care that is necessary. So if I can share a personal story and the impact it had on our family, perhaps it will encourage other men to visit their family physician and seek preventative care. Additionally, as a father of three young boys, I owe it to them to stay healthy, which means booking an annual physical that includes discussing my prostate health.

  • How did you become a chef with a specialization in BBQ? Where does that passion come from?

I have a long-standing fascination with fire and I've found a productive and delicious                way to free the fire animal inside!

  • What is your favorite food to grill?

Thin cut marinated Korean Short Ribs 

  • What's one grilling rule that every home cook should ignore?

Soaking bamboo skewers in water before grilling with them... they always still burn. It's better to invest in stainless steel reusable skewers for all your skewering needs

  • Beyond the grilling essentials, what's your go-to BBQ tool?

A long set of tongs. Don't underestimate the heat that can come off the grill! It's always when the fire is flaring up that you need to get in there and move the food around. With a long set of tongs, it's not an issue. 

  • Why is the Celebrity Battle of the BBQ important to you?

As a man, I have vested interest in prostate health. I hope that the funds raised will help save lives.

Chef Corbin's BBQ Chipotle Chicken Flatbread

Topped with grilled corn, heirloom tomato, fresh cilantro and lime yoghurt dressing

Yield- 1 large flat bread


  • 5- oz. boneless, skinless chicken thigh  (pounded thin)

  • 1 tbsp. olive oil

  • ½ tsp. chipotle paste

  • Juice from ½ lime

  • Salt and pepper to taste

  • 1 ball fresh pizza dough

  • 2-4 tbsp. extra virgin olive oil

  • 1-2 tbsp. roasted garlic puree

  • 1 cup shredded mixed cheese (i.e.’s Provolone, Mozzarella, Parmesan and Asiago)

  • ½ cup charred corn niblets

  • 1 large heirloom tomato, diced medium

  • ½ cup fresh cilantro sprigs

  • Salt and pepper to taste

  • Juice from 1 lime

  • ½ cup plain yoghurt


Toss the chicken with olive oil, chipotle, and lime juice. Marinate 1-2 hours. Preheat BBQ to 380 degrees.  Season the chicken with salt and pepper and grill until juices run clear (10-12 minutes).  Remove from heat and cool completely. Slice into bite-sized pieces.

Roll the pizza dough out to ¼ inch thick.  Brush olive oil on both sides. Preheat BBQ to 300 degrees.

Spray the BBQ with non-stick cooking spray or oil. Place the rolled pizza dough onto the hot grill and cook until the bottom becomes golden brown.  Flip the pizza over and continue to cook other side.  While the pizza is still on the grill, brush the top, grilled side with roasted garlic, top with grated cheese, diced tomato, sliced-grilled chipotle chicken and charred corn.  Close the BBQ lid and continue to cook until the cheese has melted.  Remove from heat and cut into wedges.  Combine the yoghurt and lime juice and drizzle it lightly over the baked pizza. Garnish with fresh cilantro and serve while still warm.
